I’m not sure what it is about a lemon poppyseed muffin, but if offered a selection of any flavor this would always be my #1 choice! I can always guarantee it will be sweet, tart, and have a fun little texture in every bite I take.
Lemon poppyseed muffins are such a bright way to start your day, but can also be thoroughly enjoyed as a snack anytime of day or night. On occasion, I’ve even been known to pop one or two in the microwave for a bit and then top it with vanilla ice cream… delicious!
The problem with most muffins and similar breakfast items is they don’t necessarily offer a complete “meal”. These items will typically be very high in carbs, moderate to high in fats, and very low in protein.
To get the most bang for your buck its always best to bake from scratch. You can control your use of ingredients, sweeten to your liking, and pack it with all things healthy and nutrient dense.
They are moist, soft, so full of flavor, and most important… 100% HEALTHY! Even better than that? The entire family LOVES them!
I remember when I was testing this recipe out for the first time and before I could get them out of the hot pans, both my daughter and husband had their paws on them. Before I knew it, 1/2 the batch was gone!
I ended up having to make another batch because my daughter asked to have them for her breakfasts over the next few days. No problem there! I will gladly prep some more so I can ensure she gets some healthy food in her belly to start her day!
Of course poppy seeds would work great in this recipe, but for some added nutrition I used chia seeds instead! Similar texture with no taste and they soak up any additional moisture the batter may have.
This batch was the additional one I made for my daughter so I only used 1/2 the amount of chia seeds. She’s a very picky eater and if she saw the amount of ‘seeds’ I like in my muffins, I know she would have had issues with it!
Better safe than sorry… my batch though? Double the amount of chia seeds! I LOVE the tiny specs and texture!
Lemon Chia Seed Protein Muffins Recipe
- 1 1/4 cup Kodiak Power Cakes
- 1 tablespoon coconut flour
- 1 scoop Pretty Fit ‘Natural Vanilla’ whey protein
- 1 tablespoon chia seeds
- 1 large lemon (zested and juiced)
- 1 teaspoon baking powder
- 1/4 cup egg whites
- 2 tablespoons 0% Greek yogurt
- 3/4 teaspoons lemon extract
- 1/2 teaspoon vanilla extract
- 4 tablespoons honey
- Preheat oven to 350 degrees and coat a muffin pan with non stick spray.
- In a large bowl, combine all ingredients and mix until batter is smooth.
- Divide and pour batter into prepared pan. Bake for 20-22 minutes until edges are slightly golden brown and middles bounce back to touch.
- Remove from oven and let cool.
Makes 12 muffins
Fat: 1 gram
Carbs: 13 grams (fiber ~ 2 grams)
Protein: 6 grams
