Ingredients

  • 1 cup oat flour
  • 1 cup grated carrots
  • 2 scoops of vanilla protein powder
  • 2 egg whites
  • 1/4 cupFat-free Greek yoghurt
  • 3 tbs pumpkin purée
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda (+pinch of salt)
  • (1/3cup) stevia (natural sweetener)
  • BONUS: 60 grams of sugar free dark chocolate chips or walnuts

Directions

  1. Preheat oven to 350F
  2. Combine all dry ingredients
  3. In a separated bowl mix wet ingredients
  4. Add wet ingredient to dry & mix well (batter will be thick)
  5. Use a tablespoon to get the same size pies & place in a lined baking sheet (should be around 24 single pies)
  6. Bake for 10-12 min
