Salmon Cakes Recipe with Lemon Dill Sauce

This recipe serves four adults


1 tsp grated lemon peel
1 tbsp lemon juice
1 tbsp olive oil
1 clove garlic, minced
3 cans (6 oz each) boneless salmon, drained and crumbled
¼ cup breadcrumbs
¼ cup green onions chopped
1 egg white
¼ tsp pepper

Dill Sauce

½ cup plain Greek yogurt
1 tsp lemon juice,
1 tsp dill
¼ tsp garlic powder
Sea salt to taste


Dill Sauce

Combine Greek yogurt, lemon juice, dill, garlic powder and salt in small bowl. Cover and chill in refrigerator.

Salmon Cakes

Combine salmon, breadcrumbs, green onions, egg white, lemon juice, lemon peel and pepper. Form 8 cakes with mixture.

Heat olive oil in a medium skillet on high heat. Cook salmon cakes 3-4 minutes on each side until browned. Serve with lemon dill sauce on a bed of greens.
